I've looked a couple of times, and the rules do not seem to be clear on this question: What constitutes an "irrigated" plantation tile? Does it have to have a canal running alongside it, or is a tile that touches the spring on a corner also connected/irrigated?

yes a canal running along side it. Remember at the end of the game any non-irrigated plantation is dried up regardless of how many workers or on it. No spring doesn't count.

Do canals have to originate at the spring and all connect? Also not clear in the rules, though it would be logical to assume so.

Have to originate from spring....think of the spring supplying water flow to all plantations there must be a canal flowing there. It says it in the official rules I just didn't have room to fit it on half a page of a Quick Reference guide. Perhaps Ryan should add it in the HTML version of the rules.
