My game has made it to round two and we have therefore had one 'voice'.

I can check which cards have been played by looking at the game log, but this may not always be the case (ie if not a tie) so it would probably be sensible to show how many of each type of card has already been played.

when playing the real game the cards are turned over and you can't look at them again. So I dont think the game log needs to show which cards have been played.

When you are playing face to face it is not too difficult to have an idea what has gone, but when you are playing half a dozen games at once it is not the same.

A similar argument applies for open money in Amun Re for example.

Is the constraint on seeing played VoP cards explicit in the rules? It seems absurd: anyone can count, and it seems an unnecessary burden to force people to memorize/remember or write down previous plays.

Computers are excellent at tracking and 'bookkeeping' activities, and displaying what is being tracked. This would seem to be an excellent opportunity to deploy that power, regardless of the rules in the 'physical' world.
