I'm into German games like Catan, Princes of Rennaisance, Carcasonna, etc. So why not try this?? I have a simple question, whats the difference between a cow,pig,or sheep in the game (besides the blatantly obvious comments like: The Sheep has wool and the other 2 don't, or the pig has a snout), I mean in terms of the game itself do u get bonuses with sheep herds, or pig herds? why would I want different animal herds? the rules don't explain this topic, and if they do not very well

No differences, except they can only be played in chains of the same kind of animal. So which cards you draw and how you manage your hand are important.
